miktex non trova i file .sty solo nella conversione da dvi a pdf

      Se da terminale lancio dvipdfmx ho il log che allego. Cosa devo fare?

          Il tuo file compila benissimo sia con latex sia con pdflatex, senza nessun errore e trovando tutti i file che gli servono.

          Trasformando il file .dvi sembrerebbe che MiKTeX non trovi al mappa dei font; la mappa per divipdfm è diversa da quella per pdftex equeste due sono diverse ancora da quella di dvips (che trasforma il file dvi in file ps; poi con pstopdf lo si può ulterir=ormente trasformare in pdf).

          Mi are strano che pur compilando con pdflatex e con latex non si lamenti di caricare fontspec che è specifico per xelatex e lualatex. Eppure leggendo il log, anche se la riga è commentata, apparentemente il file amsart se lo carica da solo e ne sfrutta qualche proprietà. Misteri dell’informatica.

          In ogni caso ti suggerisco di aprire con Adobe Reader o Adobe Acrobat il pdf ottenuto con la compilazione; una volta aprto il file premi CTRL D e ti si apre una finestra che ti presenta diverse proprietà del file pdf che hai aperto; clicca la linguetta Fonts, e vedi quali font carica; ci sono due istanze di EBGaramond-Regular e diverse istanze dei font matematici normali di LaTeX; in sostanza i font usati in matematica non sono font Garamond.
