ed il risultato è che longtable non mi spezza la tabella, e \textbf{Variable}&\textbf{Description}&\textbf{Source}

non sono in corrispondenza delle colonne! Come mai, secondo te?

Scusa, ma che senso ha mettere tabularx dentro longtable?
