Il mio listato è esattamente il tuo, cioè:

\documentclass[a4paper]{book}
\usepackage[pdfnewwindow=true]{hyperref}

\begin{document}

Vedi \href{documenti/doc1.pdf}{qui}

\end{document}

forse sarà che io ho installato Adobe Reader 8?
