formattazione tabella

Tanto nella non è, come tabella, ma se proprio insisti devi caricare il pacchetto array e definire, per tua comodità un nuovo tipo di colonna (incidentalmente è del tutto inutile che alleghi un file tex identico a ciò che si trova nel riquadro del codice, senza che sia un esempio minimo compilabile; questo vuol dire che, scaricato il file e salvatolo con un nome (se occorresse), esso deve essere subito compilabile senza bisogno di andare a cercare in giro i pacchetti che potresti avere usato)

Le colonne p hanno il contenuto centrato (ma l’effetto non è carino; l’ho fatto lo stesso per mostrati come si fa) i fine riga sono sostituiti con \tabularnewline, pratica normale quando si specifica un tipo di composizione diverso da quello giustificato dai due lati; è mostrato come si definisce un nuova colonna con parametro, adatta al tuo caso; è tolta la riga vuota prima di \toprule; se vuoi dello spazio, metticelo esplicitamente oppure usa il pacchetto caption e configura le didascalie delle tabelle come oggetti da mettere sopra la tabella. Infine, come vedi la tabella è centrata nella pagina senza bisogno di fare nulla; a te non viene centrata?

Il parametro di posizionamento h te l’ho lasciato, ma è ovvio che non ci sta a fare nulla, una tabella da girare di solito è a piena altezza, o comunque piuttosto larga, quindi “qui” (here) non ci sta proprio.
